Yes you should run an Asset Hub node. You can run a Relay Chain node separately, if that’s what you want but it’s not necessary. Check the Relay Chain interaction section in the README for the options you have to run a Relay Chain node.
We recommend using --sync warp flag when syncing the Asset Hub node and if you use the default relay config, you can add also -- --sync warp to enable warp sync for the embedded Relay Chain as well, which will significantly speed up the initial synchronization process.
My understanding is that stable2509 corresponds to the unstable2507 release you initially discussed.
It doesn’t correspond. As noted above, this was a special crates release needed for the Asset Hub Migration and Smart Contracts launch. In any case, we recommend to run the latest version of the node.
Also, I use the Polkadot-js API for interactions with Polkadot, but it seems release notes aren’t available for that.
For what do you need the release notes?
Will Polkadot-sdk and Polkadot-js api function correctly without upgrading to the latest version before AHM?

If they do not work, from which version is operation guaranteed, and when will that version be announced?
Please open an issue on Polkadot-SDK repo in case something shouldn’t work. Furthermore, if something doesn’t work you can still try going one version backwards.

I understand that while the Polkadot SDK release version 2509 for AHM, the Polkadot-js API will not release a specific version for AHM; it is sufficient to keep it updated to the latest version.

Polkawallet is no longer maintained. I strongly recommend using the 12-word mnemonic phrase associated with your account to restore it on any compatible wallet, such as Nova Wallet or Subwallet. Then, you’ll be able to access the funds on Kusama Asset Hub.
